How to answer: FIFO stands for First In, First Out. When you receive new stock, you move older product to the front and place new product behind it. Walk the interviewer through a concrete scenario — for example, rotating a fresh delivery of chicken breast so the older product gets used in today's prep.

 

 

Question: "What is the 'danger zone' temperature range for food storage, and how often do you check line fridge temperatures?"

 

How to answer: The danger zone is 4°C to 60°C — the range where bacteria multiply rapidly. Line fridge temperatures should be checked and logged at the start of every shift, and again mid-service for high-volume kitchens. Mention temperature logs specifically; it signals professional-level awareness.

 

 

Question: "How do you store raw meats versus ready-to-eat foods in the walk-in cooler to prevent cross-contamination?"

 

How to answer: Raw poultry goes on the bottom shelf (highest cook temperature required), then raw ground meats, then whole cuts of beef and pork above those, with ready-to-eat foods on the top shelf or clearly segregated. All items should be covered and clearly labelled with date stickers. Mention colour-coded cutting boards if you've used them.

 

 

Province-Specific Compliance Details That Will Set You Apart

 

Toronto and Ottawa — Certification required: Food Handler Certification (Ontario). Governing body: Ontario Ministry of Health (MOH). In your interview, mention MOH inspection standards and the DineSafe programme.

 

Vancouver — Certification required: FOODSAFE Level 1 (BC). Governing body: Vancouver Coastal Health (VCH). In your interview, mention VCH inspection frequency and Fraser Health overlap.
